kathi roll - calcutta to sydney
The Kathi Roll has made an enormous journey from the shores of India to a worldwide food sensation. The Roll available with or without eggs - with fillings such as Chicken or Paneer or just the bare egg by itself dominate the street food scene in Kolkata, the City of Joy.
The team at Calcutta Kathi Rolls is bringing this food sensation to the people of Sydney. After operating various market stalls, we have the red and black Calcutta Kathi Roll food truck which will traverse parts of Sydney and beyond to bring this food closer than making a trip almost 9,000 kilometres away.
We are as authentic as it can get - making the filling in kathi (skewers) and the all-important Paratha cooked fresh in front of you as you wait to be served. The flakey texture of the paratha with the flavoursome filling of Chicken, Lamb or Paneer (v) garnished with lemon juice, chilli, onions and spices create a melody that is irresistible and will make you crave for more. We also have a simple Egg Roll served with cucumber as a filling wrapped inside our parathas.
Legend says that a Kathi Roll is not a Kathi Roll unless it is had on the streetside - like you get in the footpaths of Kolkata amidst the cacophony of people, cars and traffic and the noise of the spatula hitting the tawa on which the paratha is cooked - creating an ambience that is truly divine. Although the noise is hardly comparable here, we intend to create the ambience and the noise with the food doing the talking.
Kolkata's crumbed fish fry is the citysiders' favourite afternoon snack - and where else can you find it in our shores? We miss it so much that we decided to bring the crumbed fish fry. We have tried to make it as authentic Kolkata expereince as possible - serving the fry with "Kasundi" mustard. The fillets are marinated with our signature spices and then crumbed and fried fresh in front of you. No wonder this is a delight to eat !
One of our iconic menu item is the Biryani. Kolkata food scene is not complete without having a serve of the mouthwatering biryani - modified to suit the palate of Calcuttans. Its the dum biryani - and prepared Kolkata style with aromatic spices and saffron and comes with a boiled egg. The Kolkata style biryani comes with either the Lamb or Chicken which will create magic in your mouth with fillings of tender meat to recreate the flavours that we miss from iconic Kolkata restaurants around Park Circus.
Our latest addition in the Indian Snacks section of our menu is the Mughlai Paratha. It has been made famous and served to generations of Kolkata people by Anadi Cabin in Esplanade East. The Mughlai Paratha which originated from the Mughal empire and travelled to Bengal from the Nawabs of Murshidabad is served by us with the traditional runny potato curry for that perfect balance.
In our third year, we have introduced two new kolkata delicacies - mangsher chop (lamb mince croquet) and vegetable chop (vegetable croquet). When guests drop in for "adda", the mangshor chop and/or vegetable chop feature as the "go toi" food along with "cha". Mangsher chop has keema wrapped inside a spicy potato coating. Vegetable chop is a mishmash of sweet beetroot, carrots, potato and spices formed into a round ball shape and fried to lend itself a quintessential taste so dear to the Bengali hearts. Come and savour these two new items from our food truck.
Kolkata's love for sweets is well known and the langcha (the Bengali style Gulab Jamun) has its own special place in the heart of every Bengali. There is a reason why the langcha (called lovingly due to its elongated shape) is so popular - it's heavenly and different to the Gulab Jamuns as the sweets are fried a little bit more in the sugar syrup and comes topped with khowa kheer (milk solids) to create a wonderful melody. Along with Langcha try our Mishti Doi - served in traditional earthen pot which hopefully will fill the void of mouthwatering sweets that we so dearly miss from Kolkata, our City of Joy.
